Seedy Oat Energy Bars

Seedy Energy Bars, your go-to for a delicious and energy-packed snack on the go!

Ingredients:

  • 4oz rolled jumbo oats
  • 1oz unsweetened puffed rice (not crisped rice cereal)
  • 2½oz toasted flaked almonds
  • 1oz mixed seeds
  • 4½oz stoned dates, chopped
  • 1¾oz dark chocolate chips (optional)
  • 1½oz raisins or dried berries of your choice
  • 3½oz crunchy peanut butter
  • 3¼oz honey

Directions:

Prep Oats:

Line an 8" square tin with baking paper. Preheat the oven to 350°F. Spread the oats onto a baking tray and toast for about 10 minutes until lightly browned. Set aside to cool.

Step 1:

In a large bowl, combine the toasted oats, puffed rice, almonds, seeds, chopped dates, chocolate chips, and raisins. In a small saucepan, melt peanut butter and honey together over gentle heat. Stir until smooth.Line an 8" square tin with baking paper. Preheat the oven to 350°F. Spread the oats onto a baking tray and toast for about 10 minutes until lightly browned. Set aside to cool.Step 2:

While the peanut butter and honey mixture is still warm, stir it into the oat mixture, coating all ingredients thoroughly. Transfer the mixture into the lined baking pan, pressing firmly to create an even layer. Place the pan in the freezer for 20 minutes to firm up before cutting into 15 bars.
